  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp crushed red pepper flakes (adjust to your spice preference)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  • Instructions

  • Start by boiling salted water in a large pot. Add the penne pasta and cook until al dente, usually about 8-10 minutes. Drain and set aside, saving a cup of pasta water for later use.
  • In a large skillet, heat the olive oil over medium heat. Add the rattlesnake sausage, breaking it apart with a wooden spoon. Sauté until it’s browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the diced onion, garlic, and red bell pepper. Sauté until the onion is translucent and the peppers are softened, approximately 3-5 minutes.
  • Add the heavy cream and Parmesan cheese to the skillet with the vegetables, stirring until the cheese melts and the sauce thickens slightly. Then, incorporate the cooked sausage back into the mix.
  • Add the cooked penne pasta into the skillet, tossing it with the sauce to ensure it’s evenly coated. Use the reserved pasta water to adjust the sauce’s consistency as needed. Season with crushed red pepper flakes, salt, and pepper to taste.
