Ingredients
Scale
8 ounces of linguine or spaghetti
1 pound of large shrimp, peeled and deveined
4 tablespoons of unsalted butter
3 tablespoons of extra virgin olive oil
4 cloves of garlic, minced
1 teaspoon of red pepper flakes (optional)
1/2 cup of white wine (Chardonnay works best)
Juice of 1 lemon
1/4 cup of fresh parsley, chopped
Salt and pepper, to taste
Instructions
Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti, cooking according to package instructions (usually 8 to 10 minutes) until al dente. Reserve a cup of pasta water, then drain and set aside.
Sauté the Garlic and Shrimp: In a large skillet, heat the butter and olive oil over medium heat. Once the butter melts, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque.
Deglaze the Pan: Pour in the white wine and bring it to a simmer. Let it cook for about 3-4 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.
Combine with Pasta: Add the cooked pasta to the shrimp mixture, along with the lemon juice and fresh parsley. Toss everything together, adding reserved pasta water a little at a time until your desired consistency is reached. Season with salt and pepper to taste.
Serve and Enjoy: Plate up your shrimp scampi pasta, garnishing with a sprinkle of parsley and maybe even some grated parmesan if desired. Serve immediately while it’s hot and enticing!
