1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
24 oz cream cheese, softened
1 cup granulated sugar
½ cup sour cream
3 large eggs
1 tsp vanilla extract
3 cups Granny Smith apples, peeled, cored, and sliced
½ cup brown sugar
1 tsp cinnamon
2 tbsp lemon juice
1 cup granulated sugar (for caramel)
½ cup heavy cream
4 tbsp unsalted butter
1 tsp sea salt
Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until well mixed. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar, sour cream, and vanilla extract, mixing well. Add eggs one at a time, blending until just incorporated.
In a separate bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice until evenly coated.
Pour half the cheesecake filling over the cooled crust, followed by a layer of the apple pie filling, then the rest of the cheesecake filling on top. Bake for 60 minutes until the center is set but still jiggly. Let it cool at room temperature for about 30 minutes before transferring it to the fridge to chill for at least 4 hours, preferably overnight.
