  • 1 can (15 oz.) pumpkin puree
  • 2 cups tomato sauce
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley (optional)

  • Instructions

  • Cook the pasta in a large pot of salted water until al dente, according to package instructions. Drain and set aside, saving a bit of the pasta water.
  • In a large mixing bowl, combine pumpkin puree, tomato sauce, garlic powder, Italian seasoning, salt, and pepper.
  • Add the drained pasta to the pumpkin tomato sauce mixture and toss gently until well-coated. If too thick, add reserved pasta water to loosen.
  • Preheat oven to 375°F (190°C). In a greased baking dish, layer half of the pasta mixture, dollops of ricotta cheese, and sprinkle mozzarella. Repeat the layers and top with remaining mozzarella.
