2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
3 medium carrots, sliced
2 stalks celery, chopped
4 cups vegetable broth
1 can (14 oz) diced tomatoes, with juices
1 teaspoon dried Italian herbs
1 package (9 oz) fresh or frozen vegetarian ravioli
2 cups fresh spinach or kale, chopped
Salt and pepper, to taste
Grated Parmesan cheese (optional, for serving)
Instructions
In a large pot, heat olive oil over medium heat. Add diced onions and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
Stir in the sliced carrots and chopped celery, cooking for an additional 5 minutes until slightly softened.
Add the vegetable broth and canned diced tomatoes (with juices) to the pot. Bring to a gentle boil.
Sprinkle in the dried Italian herbs, and season with salt and pepper to taste. Introduce the ravioli to the pot, stirring gently. Simmer for 5-6 minutes until ravioli are tender.
