In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until fully incorporated. Press the mixture evenly into the bottom of an 8×8 inch baking dish. Set aside.
Beat the softened cream cheese in a bowl until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy. In a separate bowl, whip the heavy cream to soft peaks and then fold it gently into the cream cheese mixture until fully blended.
Spread half of the cheesecake mixture over the crust. Then, layer 1 cup of mixed fresh berries on top. Repeat the process with the remaining cheesecake mixture and berries, reserving a few berries for decoration.
Cover the dish with plastic wrap and refrigerate for at least 4 hours. Once chilled, slice into squares, garnish with fresh berries or mint leaves, and serve.
