1 cup of graham cracker crumbs (substitute with crushed Oreos for a twist)
1/4 cup unsalted butter, melted
2 tablespoons granulated sugar
1 cup coconut milk (for a lighter version, use almond or oat milk)
1/2 cup heavy cream
1/2 cup sweetened shredded coconut
1/4 cup granulated sugar (can replace with coconut sugar)
2 large egg yolks
1 teaspoon vanilla extract
1/4 teaspoon salt
Fresh whipped cream, for topping (optional)
Additional toasted coconut flakes, for garnish (optional)
Instructions
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into mini tart pans for the crust and bake at 350°F for about 10 minutes. Allow to cool.
In a saucepan, combine coconut milk, heavy cream, and shredded coconut over medium heat. In a separate bowl, whisk sugar, egg yolks, and salt. Gradually combine the mixtures and cook until thickened.
Remove from heat, stir in vanilla extract, cool for 10 minutes, then pour into crusts. Refrigerate for at least one hour.
