1 egg, beaten
2 cloves garlic, minced
1 tsp garlic powder
1 tsp onion powder
½ cup green onions, chopped
½ cup honey
¼ cup soy sauce (low sodium is best)
2 cups cooked rice (white, brown, or even quinoa)
1 cup bell pepper, diced
1 ½ cups broccoli florets (fresh or frozen)
Salt and pepper to taste
Sesame seeds for garnish (optional)
Instructions
In a large bowl, combine the ground beef, breadcrumbs, beaten egg, minced garlic, garlic powder, onion powder, and green onions. Season with salt and pepper to taste. Use your hands to mix until just combined, being careful not to overwork the mixture.
Roll the mixture into small meatballs, about 1 inch in diameter. You should yield roughly 24 meatballs.
In a large skillet over medium heat, add a splash of oil. Once the oil is hot, sear the meatballs for about 5-7 minutes, turning them around occasionally until they are browned on all sides.
In a small bowl, whisk together honey and soy sauce until smooth.
In a large baking dish, combine the cooked rice, diced bell peppers, broccoli florets, and browned meatballs. Pour the honey garlic sauce over the top and gently stir to coat ingredients evenly.
