3–4 ripe peaches, peeled and sliced (about 2 cups)
1 teaspoon vanilla extract
1 tablespoon lemon juice

Instructions
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This usually takes about 2-3 minutes. Add in the egg, vanilla extract, and lemon juice until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined.
Gently fold in the sliced peaches, being careful not to break them apart.
