2 medium zucchinis, sliced into rounds or strips
1 can (15 oz) chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
4 oz burrata cheese
2 tablespoons olive oil
1 tablespoon chili oil (or more depending on heat preference)
Salt and black pepper to taste
Juice of 1 lemon
Fresh basil or parsley for garnish
Instructions
Begin by preheating your grill or grill pan over medium-high heat. Slice your zucchinis into rounds or strips, aiming for about ½ inch thickness.
Toss the zucchini slices with 1 tablespoon of olive oil, salt, and pepper. Grill for about 4–5 minutes on each side until tender with grill marks. Remove and set aside to cool.
Combine the rinsed chickpeas and halved cherry tomatoes in a large bowl. Squeeze in the lemon juice and stir well to mix.
Once the zucchini has cooled slightly, add it to the chickpea and tomato mixture and gently toss to combine.
Transfer the salad to your serving dish, tear the burrata over the top, and drizzle with chili oil to taste.
Garnish with fresh basil or parsley and serve immediately or let sit for a few minutes for flavors to meld.
