4 ripe avocados
200g burrata cheese (substitutes: mozzarella or goat cheese)
1 large baguette or ciabatta, sliced
2–3 tbsp olive oil, extra virgin recommended
1–2 cloves garlic, minced
Fresh basil leaves, for garnish
Salt and pepper, to taste
1 tsp lemon juice
Instructions
Preheat your oven to 180°C (350°F). Arrange the sliced baguette or ciabatta on a baking sheet. Brush each slice lightly with olive oil, then sprinkle with minced garlic. Bake for approximately 10 minutes or until golden brown.
While the bread is toasting, cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Add the lemon juice, salt, and pepper, then mash until smooth but slightly chunky for texture.
Once your bread is toasted, remove it from the oven. Spread a generous layer of the mashed avocado on each slice. Tear pieces of burrata and place them on top of the avocado.
Finish by garnishing your bruschetta with fresh basil leaves. Drizzle a bit of olive oil over the top for an extra touch of flavor. Serve immediately to enjoy the freshness!
