Instructions
Prepare the Cake Batter: Preheat your oven to 350°F (175°C). In a large bowl, whisk together the eggs and granulated sugar until thick and pale, about 3-5 minutes. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined. Add vanilla extract.
Bake the Cake: Line a 15×10-inch jelly roll pan with parchment paper and pour the batter evenly. Place in the preheated oven and bake for 25 minutes, or until the cake springs back when lightly touched.
Cool and Roll: As soon as the cake comes out of the oven, place a clean kitchen towel on a flat surface. Dust the towel with powdered sugar to prevent sticking. Invert the cake onto the towel and remove the parchment paper. Roll the cake tightly along with the towel, then set aside to cool completely.
Prepare the Filling: While the cake cools, whip the heavy cream, powdered sugar, and vanilla extract in a large bowl until soft peaks form. Fold in the chopped cherries with care to keep their shape.
Assemble the Cake Roll: Once the cake is completely cool, carefully unroll it. Spread the cherry cream mixture evenly over the cake, leaving about 1 inch empty at the edges. Roll the cake up tightly without the towel, then wrap it in plastic wrap. Refrigerate for at least 30 minutes to firm up.
