2 medium-sized eggplants
2 cups ricotta cheese (substitute with cottage cheese for a lighter option)
1 cup shredded mozzarella cheese (use vegan mozzarella if lactose-free)
1 cup grated Parmesan cheese
2 cups marinara sauce (or homemade tomato sauce)
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon fresh basil, chopped (or 1 tsp dried)
Salt and pepper to taste
Instructions
Prepare the Eggplants: Start by preheating the oven to 375°F (190°C). Cut the eggplants lengthwise into 1/4-inch thick slices. Sprinkle salt on both sides and let them sit for about 15 minutes until they sweat out their moisture.
Roast the Eggplant Slices: After the eggplants have sweated, rinse off the salt and pat them dry with a paper towel. Brush both sides with olive oil and place the slices on a baking sheet. Roast in the preheated oven for about 20 minutes, flipping halfway through until they’re golden brown and tender.
Prepare the Cheese Filling: While the eggplants roast, mix the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, garlic, oregano, and chopped basil in a bowl. Season the mixture with salt and pepper to taste.
Assemble the Rollatini: Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish. Take one roasted eggplant slice and place about 2 tablespoons of the cheese mixture at one end. Roll it up tightly and place seam-side down in the dish. Repeat with the remaining slices.
Bake the Dish: Once all your rollatini are in the dish, pour the remaining marinara sauce over the top. Sprinkle with the rest of the mozzarella and Parmesan cheeses. Cover it with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
