1 lb boneless, skinless chicken breasts, diced
2 cups hatch chilis, roasted and chopped
2 cups shredded cheddar cheese
1 cup cream cheese, softened
1 cup sour cream
1 cup diced tomatoes, canned or fresh
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, cook the diced chicken over medium heat until it’s golden brown and cooked through, about 7-10 minutes. Season with salt, pepper, onion powder, garlic powder, and cumin.
In a separate bowl, combine the softened cream cheese, sour cream, diced tomatoes, and half of the cheddar cheese. Mix until smooth.
