  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1 tablespoon cornstarch
  • Pinch of salt
  • 1/4 cup granulated sugar (for caramelizing)

  • Instructions

  • Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a springform pan. Bake for 10 minutes and set aside to cool.
  • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and mix until combined. Add the vanilla extract, then the eggs one at a time, mixing well after each addition. Finally, stir in the heavy cream, cornstarch, and salt.
  • Pour the cheesecake filling over the cooled crust. Bake for 60-65 minutes in a water bath until the edges are set and the center has a slight jiggle.
  • Turn off the oven and let the cheesecake cool inside for one hour. Then refrigerate for at least 4 hours.
  • Before serving, sprinkle sugar over the top and caramelize using a kitchen torch or broiler for a few minutes.
