9 lasagna noodles (no-boil or regular)
3 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 ½ cups homemade or store-bought basil pesto
1 egg (optional, for added creaminess)
Salt and pepper to taste
Fresh basil leaves for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the ricotta cheese, beaten egg (if using), 1 cup of mozzarella, Parmesan cheese, salt, and pepper. Mix well to create a creamy filling.
Spread ½ cup of pesto on the bottom of a 9×13 inch baking dish.
Place 3 lasagna noodles over the pesto. Spread ⅓ of the cheese mixture over the noodles, followed by another ½ cup of pesto. Repeat this layering process two more times, finishing with noodles on top.
Spread the remaining pesto over the top layer of noodles, then sprinkle with the remaining mozzarella cheese.
Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbling and golden.
Once baked, let the lasagna rest for 10 minutes before slicing. Garnish with fresh basil leaves.
