  • 3 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 ½ cups homemade or store-bought basil pesto
  • 1 egg (optional, for added creaminess)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ricotta cheese, beaten egg (if using), 1 cup of mozzarella, Parmesan cheese, salt, and pepper. Mix well to create a creamy filling.
  • Spread ½ cup of pesto on the bottom of a 9×13 inch baking dish.
  • Place 3 lasagna noodles over the pesto. Spread ⅓ of the cheese mixture over the noodles, followed by another ½ cup of pesto. Repeat this layering process two more times, finishing with noodles on top.
  • Spread the remaining pesto over the top layer of noodles, then sprinkle with the remaining mozzarella cheese.
  • Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbling and golden.
  • Once baked, let the lasagna rest for 10 minutes before slicing. Garnish with fresh basil leaves.
