1 lb fresh broccoli florets
4 slices of bacon, diced (can substitute with turkey bacon for a healthier option)
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream (or opt for coconut cream for a dairy-free alternative)
1 cup grated Parmesan cheese
Salt and pepper to taste
1 teaspoon red pepper flakes (optional for a spicy kick)
Instructions
In a large skillet over medium heat, cook the diced bacon until it’s crispy, stirring occasionally. This should take about 5-7 minutes. Once done, use a slotted spoon to remove the bacon from the skillet and set it aside, leaving the rendered fat in the pan.
Add 2 tablespoons of olive oil to the skillet with the bacon fat and increase the heat slightly. Toss in the minced garlic, sautéing for about 1-2 minutes until fragrant but not browned.
Add the fresh broccoli florets to the skillet. Stir them well to coat with the oil and garlic mixture. Cover and cook for about 4-5 minutes, allowing the broccoli to steam while still being vibrant and crisper.
Reduce the heat to low and pour in the heavy cream. Stir to combine all the ingredients. Next, gently fold in the grated Parmesan cheese until melted and the sauce becomes thick. Season with salt, pepper, and red pepper flakes to taste.
Return the crispy bacon to the skillet and mix everything together gently. Serve hot, garnished with extra Parmesan if desired!
