1 pre-made pie crust (store-bought or homemade)
1 pound fresh Florida shrimp, peeled and deveined
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup diced onions
1/2 cup diced bell pepper (red or green works well)
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon Old Bay seasoning
Salt and pepper to taste
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Prepare the pie crust according to the package instructions or roll out homemade dough to fit a 9-inch pie dish and blind bake for 10 minutes at 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add diced onions, bell peppers, and minced garlic. Sauté until soft and fragrant (5-7 minutes).
Add shrimp to the skillet with Old Bay seasoning. Cook until shrimp are pink (4-5 minutes), then remove from heat and let cool slightly.
In a mixing bowl, combine shrimp mixture with heavy cream and shredded cheddar cheese; season with salt and pepper to taste.
Pour the shrimp mixture into the prepared pie crust and spread evenly. Optionally sprinkle additional cheese on top.
Preheat oven to 375°F (190°C) and bake the pie for 30 minutes or until golden brown and bubbly.
