Ingredients

  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk (or almond milk for dairy-free)
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 2 tbsp brewed coffee (cooled)
  • Optional: Shaved chocolate or coffee beans for garnish

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the eggs, milk, vegetable oil, and vanilla extract. Gradually mix this into the dry ingredients until just combined.
  • Carefully stir in the boiling water.
  • Line a muffin tin with cupcake liners and fill each liner about 2/3 full with batter.
  • Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  • While cooling, beat the heavy cream until soft peaks form, then gradually add powdered sugar and brewed coffee until stiff peaks form.
  • Once the cupcakes have cooled, remove the center of each and fill with coffee cream using a piping bag.
  • Top with chocolate ganache or additional whipped cream if desired and garnish with shaved chocolate or coffee beans.
