1 ¾ cups all-purpose flour
¾ cup unsweetened cocoa powder
2 cups granulated sugar
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 large eggs
1 cup milk (or almond milk for dairy-free)
½ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
1 cup heavy cream
½ cup powdered sugar
2 tbsp brewed coffee (cooled)
Optional: Shaved chocolate or coffee beans for garnish
Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, combine the eggs, milk, vegetable oil, and vanilla extract. Gradually mix this into the dry ingredients until just combined.
Carefully stir in the boiling water.
Line a muffin tin with cupcake liners and fill each liner about 2/3 full with batter.
Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
While cooling, beat the heavy cream until soft peaks form, then gradually add powdered sugar and brewed coffee until stiff peaks form.
Once the cupcakes have cooled, remove the center of each and fill with coffee cream using a piping bag.
Top with chocolate ganache or additional whipped cream if desired and garnish with shaved chocolate or coffee beans.
