  • 1 cup milk (dairy or non-dairy varieties like almond milk)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme (fresh or dried)
  • 1 teaspoon sage (fresh or dried)
  • Salt and pepper to taste

  • Instructions

  • Preheat your oven to 375°F (190°C). Peel, seed, and dice the butternut squashes into uniform cubes to ensure even cooking.
  • In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring it to a boil, reduce to a simmer, cover, and cook for about 15 minutes or until the broth has been absorbed. Fluff with a fork and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they become translucent and fragrant, about 5-7 minutes.
  • In a large mixing bowl, combine the sautéed onions and garlic, roasted butternut squash, cooked quinoa, milk, cheese, thyme, sage, and seasoning. Gently stir to combine all ingredients evenly.
  • Transfer the mixture to a greased 9×13 inch baking dish. Top with additional cheese if desired, then cover with aluminum foil. Bake for 45 minutes, then remove the foil and bake for an additional 15-20 minutes until the top is golden brown and bubbly.
