1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsalted butter, softened
2 large eggs
½ cup milk
2 teaspoons baking powder
1 teaspoon vanilla extract
½ teaspoon salt
1 cup fresh blackberries, mashed
½ cup blackberry puree (optional for swirling)
Instructions
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a mixing bowl, combine the softened butter and sugar, beating until light and fluffy (3-5 minutes).
Add the eggs one at a time, mixing well after each addition, and add the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually mix this into the wet ingredients, alternating with the milk.
Gently fold in the mashed blackberries.
Fill each cupcake liner about two-thirds full with the batter.
If using blackberry puree, drop spoonfuls over the tops of the batter and swirl gently with a toothpick.
Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
Let cool in the pan for 5 minutes before transferring to a wire rack.
