½ cup unsalted butter, melted
¼ cup sugar
24 oz cream cheese, softened
1 cup sugar
1 tsp vanilla extract
3 large eggs
1 cup sour cream
2 medium apples, peeled and diced (Granny Smith works best)
1 tsp cinnamon
2 tbsp brown sugar
1 cup caramel sauce (store-bought or homemade)
Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until evenly mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden and fragrant.
While the crust is baking, prepare the apple filling by combining diced apples, cinnamon, and brown sugar in a medium saucepan over medium heat. Stir occasionally for about 5-7 minutes until the apples are slightly soft but not mushy. Set aside to cool.
In a separate large bowl, beat the softened cream cheese using an electric mixer until smooth. Gradually add the sugar, then vanilla, mixing until fully combined. Add the eggs one at a time, mixing just until incorporated. Finally, mix in the sour cream until creamy.
Pour half of the cheesecake filling over the crust. Layer the cooled apple mixture over the filling, then pour the remaining cheesecake mixture over the apples, smoothing it gently. Tap the pan lightly on the counter to release any air bubbles.
Bake the cheesecake for 60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven, crack the door, and allow the cheesecake to cool in the oven for 1 hour.
