2 medium zucchinis, grated
1/2 cup breadcrumbs (whole wheat or gluten-free alternatives)
1/2 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1 teaspoon dried oregano

1/4 cup fresh parsley, chopped (optional)
Instructions
Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
In a large mixing bowl, combine grated zucchini, breadcrumbs, Parmesan cheese, egg, minced garlic, dried oregano, salt, black pepper, and parsley. Mix until well combined.
Preheat your oven to 400°F (200°C). Shape the mixture into 1-inch balls and place them on a lined baking sheet.
