1 pound of gnocchi (fresh or frozen)
4 slices of bacon, diced
1 medium onion, chopped
2 cloves of garlic, minced
3 cups of chicken or vegetable broth
1 cup of heavy cream (or half-and-half for a lighter option)
1 cup of shredded sharp cheddar cheese
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
In a large pot over medium heat, add the diced bacon. Cook until crispy, about 5-7 minutes.
Remove the bacon from the pot and set aside, leaving the bacon grease. Add the chopped onions and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
Pour in the chicken or vegetable broth, scraping up any bits at the bottom of the pot for added flavor. Bring to a gentle simmer.
Add the gnocchi into the simmering broth and cook according to package instructions (usually around 3-5 minutes). Gnocchi is done when they float to the top!
Reduce the heat to low and gradually stir in the heavy cream, allowing it to heat through. Add the shredded cheddar cheese, stirring until melted and creamy.
Add the crispy bacon back into the pot, season with salt and pepper to taste, and let everything meld together for 2-3 minutes. Serve hot, garnished with fresh parsley!
